 1 tbsp Butter
 1 tbsp Corn Starch
 ¾ cup Sour Cream
 1 cup Shredded Cheddar Cheese
 1 tbsp Salsa (optional)

Melt the butter over medium heat. Add corn starch, and whisk together similar to a roux. Let that heat up for a few minutes, and then whisk in the sour cream. Let the sour cream mixture heat up for a few more minutes whisking occasionally until large bubbles start to form.

Once your mixture is starting to bubble, turn off the heat and add the shredded cheese. Whisk vigorously until the cheese mixture becomes smooth and silky. Whisk in your salsa if desired.

Enjoy with chips, over a burrito, or any way you like your queso!
